Beaver Brook Ranch is a third-generation family farm in Hope, run by Stefan, Lorena and Juliet, with more than 600 acres across eight nearby properties. Its cattle are 100% grass fed and finished, born and raised on the ranch, rotated through 15 pastures, and finished at 24 to 28 months; every carcass is dry aged 14 days before butchering. Pigs are raised on pasture and woodland on a non-GMO, corn-free diet, and the farm also raises pasture-raised chickens, eggs and turkeys. Meat is flash frozen and vacuum packed, sold by the cut, in sampler boxes and as custom bulk shares.
