Fermented or just pickled?

Not every pickle is fermented. A fermented pickle sits in salt brine while lactic acid bacteria sour it over days or weeks, and it stays alive until it is heated. A vinegar pickle gets its tang from added vinegar. Both can be delicious; only one is a living food.

We label each food by how it is made, not by any health claim.

FoodHow it’s madeLive cultures?

Learn to make it

Who teaches it around here: Sour Bellies, a Chester nonprofit led by Sophia Curtis, runs hands-on kimchi, sauerkraut, pickle and sourdough classes at libraries and farms, and gives its own ferments to local food pantries. Marksboro Mills in Blairstown teaches sourdough, most often in winter, and Cattail Hollow Farm in Lafayette hosts fermentation workshops.

The fermenting year

  • SummerCucumbers come in: half sours, garlic dills, hot peppers.
  • FallCabbage harvest: the season for sauerkraut and kimchi.
  • WinterKraut from the crock, sourdough classes and kombucha.
  • All yearSourdough from the region’s bakers and microbakeries.

Questions

Are pickles fermented?

Some are. Salt-brine pickles such as half sours and full sours are fermented by lactic acid bacteria and keep live cultures while they stay cold and unheated. Vinegar pickles such as bread and butter get their sourness from added vinegar and are not fermented.

Where can I buy naturally fermented pickles and sauerkraut in the Skylands?

Maranatha Farm in Far Hills sells lacto-fermented sauerkraut made from its own cabbage. Kilhaney’s Pickles in Hackettstown and Clinton, Jerzey Girl Pickles in Mount Arlington and The Polish Pickle Deli in Manville make their own pickles; we are confirming which of theirs are salt-brined. Each maker on this page is labeled by how its food is made.

Does sourdough bread have probiotics?

No. Sourdough is fermented by wild yeast and lactic acid bacteria, but baking ends the live cultures. What you get is slow, naturally leavened bread, which is why we label it “fermented, then baked”.

Where can I buy local kombucha in New Jersey’s Skylands?

The Kombucha Bar in Flemington has brewed its own kombucha since 2016 and refills growlers. Bucha Booch brews raw, small-batch kombucha in Sussex County and sells it at farmers markets in Sparta, Sussex, Lafayette and Morristown.

Where can I buy fresh sourdough bread in the Skylands?

In Hunterdon: Bread & Culture in Flemington, Hopkins Baking Company in Whitehouse Station, Lambertville Bakehouse, Honey Moon Bakery in Frenchtown and Bobolink in Milford. In Warren: Marksboro Mills in Blairstown, Fiddler’s Farm in Harmony and Four Fields Farm in Great Meadows. In Sussex: Windy Brow Farms in Newton, Café Pierrot in Andover and The Bread Boutique in Lafayette. In Morris: Cedar Gate Farm in Denville and Jersey Artisan Co. in Morris Plains. In Somerset: Heated in Gladstone, Manville Pastry Shoppe and Breakthrough Bakery in Warren. Several are preorder or weekend only, so check each profile.

Which Polish delis in the Skylands make their own food?

The Polish Pickle Deli in Manville makes its own sauerkraut, low-salt pickles, bigos, żurek and horseradish. Polski Smak in Butler makes its own traditional kielbasa. Krakus Deli in Phillipsburg makes pierogi, including sauerkraut and mushroom, and stuffed cabbage. For German sausages, Alpine Meats and Deli in Blairstown makes landjaeger and other dry sausages in its own smokehouses.

Where can I get a live sourdough starter?

Cedar Gate Farm in Denville sells live sourdough starter from its farm store. Many local bakers will also share a little starter if you ask.

Is black garlic fermented?

Not really. Black garlic is whole garlic held warm and humid for weeks until it turns dark and sweet. It is often called fermented, but the change comes from slow aging, not microbes. River Lea House in Branchburg makes it from its own garlic.

How we checked

We list makers only: businesses in Sussex, Morris, Warren, Hunterdon or Somerset that make the food themselves and sell it to the public. Shops that resell other brands are not listed, and cheese makers are on the Cheese Trail. Each food is labeled from the maker’s own words or a direct reply; when we can’t tell, it says “Not yet confirmed” until the maker tells us. No one pays to be listed.

Know a maker we missed? Tell us about it. Run one of these businesses? Use the update link we emailed you to correct anything.

Details checked against each maker’s own listings on . Hours change, so confirm before you go.
