Salvatore Pisani grew up in Morris County learning to grow, age and make food by hand from his father, Rocco, who came from Calabria. Jersey Artisan Co. makes fresh and aged Italian-style cheeses, including mozzarella, burrata, primo sale and scamorza, with milk from Spring Run Dairy, and naturally leavened breads with grain grown and milled by River Valley Community Grains at Marksboro Mills. Everything is made in small batches in their own cheese room in Whippany and bake shop in East Hanover, and sold at the Morris Plains cafe and at farmers markets.
