Steven Price left a long career in pharmaceutical marketing to grow garlic on a historic Branchburg farm, and River Lea House now makes a whole line from it. Its black garlic, sold at the Somerville farmers market and online, is whole bulbs held at a constant temperature and humidity for up to 60 days until the cloves turn soft, dark and sweet, with hints of balsamic, tamarind and anise. There are also Garlickles, garlic cloves pickled in vinegar and spices, and a Black Garlic Fire Cider that was recognized at the 2022 Good Food Awards. Garlic comes first from the farm, then from New Jersey growers, then from trusted U.S. growers out of season, never from China.
