Ryan Lacz and Liz Balchin bought this preserved 122-acre farm, with a stone farmhouse dating to 1790, at auction in 2015 and named it after the Irish pub in Washington, DC, where they met. Heritage-breed pigs are born and raised in the woods on acorns, walnuts and local non-GMO grain; slow-growing Freedom Ranger chickens move to fresh pasture daily and are processed on the farm in a county-inspected facility; laying hens follow an egg-mobile. Ryan also bakes sourdough from New Jersey and upstate New York organic grain with a rye starter he began 21 years ago, and the farm grows shiitake, lion's mane, pioppino, chestnut and many kinds of oyster mushrooms.

Remaining 2026 pickups: on-farm, Chester and Convent Station Oct 11, Nov 8 and Dec 6; Genesis Farm in Blairstown Oct 9, Nov 6 and Dec 4 (noon–1 PM); Stroudsburg Oct 10, Nov 7 and Dec 5; Hackettstown and South Orange Oct 18, Nov 15 and Dec 13. The subscription season ends in December, and the Stroudsburg market runs all winter. Holiday turkeys are raised on the farm, but none were listed in the store on Oct 8.
