Isaac T. Huff started Central Valley Farm as a dairy farm in 1948, and it has stayed on the same Bethlehem Township land ever since. Brian Huff, the fourth generation to run it, took over in 2018, with his father Edward still helping on the farm and at markets. The farm has grown from dairy into a full line of vegetables, small fruits, herbs and cut flowers, with laying hens for brown eggs. Besides the farm stand, the Huffs sell year-round at New York City Greenmarkets including Union Square.

The 2026 CSA pickups were expected to end in mid-October. The farm stand is listed as open every day, and the family keeps selling at New York City markets through the winter.
