Fossil Farms started as an ostrich farm, first in Pennsylvania and then in Sussex County, and grew into a distributor of farm-raised game, game birds, exotic meats and all-natural meats. It does not raise most of what it sells: owners Lance and Todd Appelbaum "slowly assembled a group of like-minded family farms" held to their own standards of "no antibiotics, no growth hormones, humane living conditions and all-natural feed." The meat comes from a long way off as well as close by. The bison is raised in Colorado and Eastern Canada, the Texas wild boar is truly wild, the Russian razorback boar comes from family farms and ranches in Canada, and the geese are raised in New York and Pennsylvania. Closest to home is its partner family farm, Roaming Acres in Lafayette, with ostrich, bison, pigs and chickens.

Market & Kitchen is the company's retail store at its Boonton headquarters, open to the public. The butcher case holds Angus and Piedmontese beef, Berkshire pork, free-range chicken, dry-aged beef, fresh-ground burgers and market-made sausages, alongside game such as elk medallions, yak sirloin steaks, alligator tenderloins, smoked wild boar bacon and bison bone broth. The kitchen makes prepared foods such as arancini and empanadas, and the shelves carry cured meats, cheese and free-range eggs. Thursday Night Dinners are fully prepared take-home meals with a new dish each week, and Sandwich Saturdays bring a new $20 sandwich every weekend. There is no holiday catering for the 2026 season.

Restaurant Latour at Crystal Springs Resort names Fossil Farms first among the local growers and producers it works with.
