Invertase opened in October 2019, and Phillipsburg is home to both its main production brewery and its taproom. Karen (a microbiologist) and Steve (a biochemist) run the taproom, and their son Stephen is head brewer; every batch goes through lab checks and a sensory panel. Beyond the taproom are a large beer garden with indoor and outdoor stages and a private cask room for events.
