The Perrotti family's butcher business began in 1967, when Italian immigrants Mario and David Perrotti opened a small shop on Union Avenue in Cranford. Brothers Michael and Mario Jr. brought it to Far Hills in 2008. The shop carries Prime beef for most cuts (ribeye, strip, porterhouse, filet, flat iron, short rib), pork and fresh Bell & Evans chicken, and makes its own sausages, from sweet and hot Italian to broccoli rabe and asiago, buffalo chicken and lamb chorizo, plus beef, turkey, chicken, salmon, lamb and golden beet burgers. The other half of the shop is prepared meals made fresh and never frozen: baked pastas, chicken and veal cutlet dishes, braised short ribs, stuffed cabbage, chicken pot pie and more, with beef ground in house.
