d'Floret is the restaurant of chef Dennis Foy and his wife and partner, Estella Quinones-Foy: a small, elegantly lit room with an open kitchen, a floor-to-ceiling black walnut Nakashima panel, lighting by the Israeli artist Ayala Serfaty and mid-century Arne Jacobsen chairs. Foy's menu changes daily and with the seasons, blending French, American and Mediterranean cooking: house-made gnocchi, a tian of crab, braised short rib, and a whole roasted chicken for two. It has been on NJ Monthly's best-restaurants list three years running, most recently the 50 Best for 2026.

The menu credits its farms by name: Valley Shepherd Creamery in Long Valley, Terhune Orchards, Chesterfield Farm Co-op, Halo Farm in Trenton and Cherry Grove Farm in Lawrenceville in New Jersey, and Amish Heritage Farm and Blue Martin Farm in Tinicum Township across the river.
