Restaurant Latour is the resort's top table: a dining room finished in natural wood and stone with panoramic mountain views, serving a three-course menu or a seven-course chef's tasting. Resort Executive Chef Florian Wehrli, from the Jura Mountains of Switzerland, and Chef de Cuisine Matt Laurich cook seasonally with fermentation, preservation and foraging; the July 2026 sample menu ran from frog legs with nettle cream and squab with king oyster mushroom to Jersey Girl ricotta with the resort's own honey. Every dinner ends with chocolates made for Latour by Jacques Torres. The wine cellar, built by resort founder Gene Mulvihill, holds about 6,000 labels in nine chambers and has won Wine Spectator's Grand Award every year since 2006; NJ Monthly named Latour to its 50 Best Restaurants list for 2026.

The resort names its growers and producers, including Jersey Girl Cheese in Frankford, Genesis Farm in Blairstown, Fossil Farms, Bracco Farm, Two Teaspoons, Armstrong Farms, The Farmers Hen, Two River Mushrooms, Nettle Meadow and Cooperstown Cheese Company; the bread at Latour is made with natural spring water from Stokes State Forest. The resort has many other places to eat, from the Crystal Tavern and Gino 34 at the Grand Cascades Lodge to Kites American Grille at the Minerals Hotel and grills at its golf courses.
